Salame Felino PGI

The mixture is made up mostly of lean meat, with the rest being hard fat. The mincing follows traditional methods, obtaining a medium-coarse grain mixture with salt, pepper and a few other flavourings.
The product is bagged in natural casing, smooth and thick, which maintains the softness of the meat even during the curing phase. It is tied by hand with string, then cured in cellars for at least sixty days. The fragrance is intense, distinctive, while the flavour is very sweet and delicate.

Salame Milano

Milano Salami is made according to the traditional, authentic Milanese recipe, in the classic wide slice shape that requires longer curing.
It is produced with meat from select pork shoulders, cleaned by hand, finely ground and processed with a careful dosing of flavourings and spices.
